Date Oatmeal Cookies recipe – 123 calories
Ingredients:
2 (8 ounce) packages chopped dates
3 cups quick oats
2 eggs
1 cup butter (2 sticks)
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup granulated sugar
1 cup packed brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
Preparation:
1. Cream together the butter, granulated sugar and brown sugar.
2. Add the eggs and vanilla; combine well.
3. Add the flour, baking soda and cinnamon; combine well.
4. Add the dates and quick oats and mix together.
5. Use a teaspoon to drop the mix onto an ungreased cookie sheet.
6. Bake in a 350 degrees F oven for about 11-12 minutes (or until golden brown).

Raspberry Almond Bars recipe – 163 calories
Ingredients:
1 pie dough
2 eggs
1/4 cup raspberry jam
1/2 cup butter or margarine, softened
2/3 cup flour
2/3 cup sugar
1/4 teaspoon salt
green food coloring
red food coloring
For the frosting
2 tablespoons butter, softened
2 tablespoons cream or milk
1 1/2-2 cups icing sugar
1 teaspoon almond extract
Preparation:
1. Prepare the pie dough for one crust unbaked shell. Line an 8″ square ungreased cake pan with the pastry.
2. Spread with the raspberry jam.
3. Cream the butter and sugar together thoroughly. Add the eggs, beating until light and fluffy. Add the flour and salt; blend well.
4. Divide the batter in half; color half green and half red.
5. First spread the green layer (doing your best not to spread the jam onto the green batter). Once the green is covering all of the jam, repeat with the red layer.
6. Bake at 350 degrees F for about 30-40 minutes (or until an inserted toothpick comes out clean). Cool completely then frost.
7. To make the frosting: Beat together the frosting ingredients until smooth and creamy, adding enough icing sugar to make a spreading consistency.
8. Spread over the cooled bars, let set and then cut into bars.

Chocolate Walnut Bars recipe – 197 calories
Ingredients:
For the crust
2 cups flour
2/3 cup cold butter, (cut into small pieces)
1/2 cup sugar
1 pinch salt
For the filling
1 1/2 cups coarsely chopped walnuts
1 (12 ounce) package semi-sweet chocolate chips
3 large eggs
2 tablespoons melted butter
3/4 cup white sugar
3/4 cup light corn syrup
teaspoons vanilla
Preparation:
1. Preheat the oven to 350 degrees F.
2. Butter a 13 x 9-inch baking pan.
3. To make the crust: in a food processor, mix the flour, sugar and salt for about 4-5 seconds (until combined).
4. Add in the butter and process until crumbly.
5. Press into the bottom of the the baking dish.
6. Bake for about 15 minutes (or until lightly browned).
7. To make the filling: in a large mixing bowl, whisk the eggs, melted butter, sugar, corn syrup and vanilla until well combined.
8. Mix in the chocolate chips and nuts.
9. Pour over the crust.
10. Bake for about 25-30 minutes (or until set).

Caramel Creme Dessert recipe – 168 calories
Ingredients:
3 eggs
2 1/2 cups warm milk
1/2 cup granulated sugar
1 teaspoon vanilla
1/4 teaspoon salt
Preparation:
1. For the caramel: Pour the 1/2 cup granulated sugar in a medium-size, heavy-bottomed frying pan and place over medium-High heat.
2. Let the sugar cook for about 3-5 minutes (until it reaches an evenly golden brown color), stirring with a wooden spoon to remove any lumps. Do not overcook as this will give the caramel a bitter taste!
3. Once the caramel has reached the proper color, add 1 tablespoon water to the pan (to keep caramel from becoming too hard).
4. Remove from the heat and carefully cover the bottom of a 2-qt mold. Tilt the mold from side to side if necessary to completely cover the bottom.
5. When the caramel has cooled, butter the sides of the mold. Set aside.
6. For the crème: Preheat the oven to 350 degrees F.
7. Lightly beat together the eggs, sugar and salt. Pour over the warm milk; add the vanilla and stir to blend.
8. Pour the mixture over the caramel in the mold.
9. Place the mold in a pan containing 2 inches hot water.
10. Place the pan in the oven; bake for about 1 hour (until set). The custard is done when knife blade inserted comes out clean.

Coconut Creme Bars recipe – 148 calories
Ingredients:
1 cup coconut
1/2 cup sliced almonds
3 5/8 ounces French vanilla pudding mix
1 (18 ounce) package yellow cake mix
1 3/4 cups milk
1/2 cup half-and-half
1/2 cup margarine

1 cup powdered sugar
3-4 teaspoons milk
2 tablespoons margarine, softened

Preparation:
1. Preheat the oven to 350 degrees F.
2. Grease a 13×9 inch pan.
3. In a medium saucepan, combine the pudding mix and 1 3/4 cups milk.
4. Bring to a boil over medium heat, stirring constantly.
5. Remove from the heat; cool while preparing the base.
6. In a large bowl, combine the cake mix, half-and-half, 1/2 cup margarine and almond extract at low speed until moistened.
7. Reserve 1 cup mixture for the topping; spread the remaining mixture in the prepared pan.
8. Bake at 350 degrees F for about 8 minutes.
9. Spoon and spread the pudding gently over the base.
10. Add the coconut to the 1 cup reserve mixture; spoon teaspoonfuls evenly over the pudding.
11. Sprinkle with almonds. Return to the oven and bake for about 20-30 minutes (or until it turns golden brown and the coconut mixture is firm to touch).
12. In a small bowl, combine all the glaze ingredients, adding enough milk for the desired glaze consistency; blend until smooth. Drizzle the glaze over the warm bars.
13. Cool completely. Cut into bars. Store in the refrigerator until ready to serve.

2 large flour tortillas
1 cup strawberries, diced

For the cake
1 (20 ounce) can crushed pineapple, undrained
2 cups flour

Greek Thiples (Honey Rolls) recipe – 66 calories

3 1/2-4 cups bread flour
2 packages active dry yeast

1/4 cup desiccated coconut
1 large egg
3/4 cup flour

1/3 cup powdered sugar
1/3 cup butter, softened

Preparation:
1. Preheat the oven to 325° F (160° C).
2. Cream the sugar and butter together.
3. Add the (slightly beaten) egg and vanilla essence.
4. Sift the flour and baking powder together.
5. Add the dessicated coconut, raisins and walnuts to the flour and mix with your hands.
6. Add this mixture to the butter and sugar mixture; fold gently.
7. Put spoonfuls of the batter 1 inch apart into a prepared (greased or covered with butter paper) baking tray and slightly flatten.
8. Bake for about 20 minutes (or until light golden brown).
9. Let cool for about 5 minutes, then take the cookies out of the tray and cool completely on a wire rack.
10. Store in an air tight container.
