Garlicky Roasted Mushrooms recipe – 58 calories

Ingredients: Garlicky Roasted Mushrooms recipe - 58 calories
2 lbs small white
mushrooms

1 tablespoon minced fresh garlic, to taste
3 tablespoons chopped fresh parsley, divided
1/2 cup olive oil
1/4 teaspoon dried red pepper flakes, to taste
1/2 teaspoon paprika
1/2 teaspoon salt (or to taste)

Preparation:
1. Preheat the oven to 400 degrees F.
2. In a medium saucepan, heat the
olive oil
over medium heat.

3. Add the garlic and cook (stirring once or twice) until soft (about 1 to 2 minutes).
4. Stir in the
red pepper flakes
, paprika and salt, and reduce the heat to medium-low.

5. Cook, stirring occasionally, the until mixture is blended (about 2 to 3 minutes).
6. Remove the pan form heat.
7. Rinse and pat dry the
mushrooms
; arrange them in a single layer on a baking sheet and brush them all over with the garlicky oil.

8. Roast the
mushrooms
for about 15 minutes.

9. Turn the
mushrooms
over and continue baking until they are golden brown (about 10 minutes).

10. During the last 10 minutes, return the saucepan to the stove over low heat.
11. When the
mushrooms
are ready, turn them into the saucepan along with any juices that have accumulated on the baking sheet.

12. Stir well to coat the
mushrooms
.

13. Add 1 tbsp of the parsley and stir again.
14. Pour into a chafing dish to keep warm.
15. Garnish with the remaining parsley and serve with toothpicks.
