Breakfast
Tomato omelette with a strawberry, banana and Activia Strawberry Pouring Yogurt shake

Ingredients

  • Spray of sunflower oil
  • 2 eggs
  • 1tbsp semi-skimmed milk
  • Black pepper
  • 1 tomato
  • 8 strawberries
  • 1 small banana
  • 130g Activia Strawberry Pouring Yogurt

Approximate calories per serving 390 kcal

Spray a small non-stick frying pan with sunflower oil. Beat 2 eggs with 1tbsp semi-skimmed milk and season with black pepper. Pour the egg mixture into the pan and gently roll the egg mixture around so it covers the base of the pan. Cook gently until the egg is almost set. Then place the pan under a pre-heated grill to set the top. While the omelette is cooking, dice 1 tomato. Sprinkle the tomatoes over the top of the omelette, fold over one half and slide onto a plate. Meanwhile, hull 8 strawberries and pop in a blender with 1 small banana and one serving of Activia Strawberry Pouring Yogurt. Blend until smooth and serve with the omelette.

Snack – 1

Healthy dippers and salsa

Ingredients

  • 2 x 300g baking potatoes
  • 2tbsp olive oil
  • 8 ripe tomatoes
  • 1 red onion
  • 1 red chilli
  • 1 clove of garlic
  • a handful of fresh coriander
  • 1 lime
  • black pepper

Pre-heat the oven to 200°C/gas mark 6. Cut 2 x 300g baking potatoes into wedges, place in a roasting tin and brush with 2 tbsp of olive oil. Bake for around 25 minutes until cooked through. Meanwhile, make a salsa. Deseed 8 ripe tomatoes and roughly chop. Finely dice 1 red onion and 1 red chilli. Crush 1 clove of garlic and roughly chop a handful of fresh coriander. Mix the ingredients together, add the juice of 1 lime and season with black pepper. Serve with the wedges.

Strawberries with melted dark chocolate

Ingredients

  • 25g dark chocolate
  • 7 strawberries

Melt 25g dark chocolate and dip in 7 strawberries.

Lunch

Greek dips with pitta
Ingredients

  • 2 wholemeal pitas
  • 4tbsp hummus
  • 4tbsp tzatziki
  • 1 celery stick
  • ½ green pepper
  • 5cm piece of cucumber
  • 1 small banana

Approximate calories per serving 576 kcal

Serve 2 wholemeal pittas with 4 tbsp of hummus, 4 tbsp of tzatziki and some vegetable crudités. Make these from 1 celery stick, half a green pepper and a 5 cm piece of cucumber. Have 1 small banana for dessert.

Dinner
Pad Thai and Activia Fat Free Cherry Yogurt for dessert
Ingredients

  • 2 layers of flat noodles
  • 1tbsp sunflower oil
  • 1 garlic clove
  • 1 red chilli
  • 4 spring onions
  • 1 lime
  • dash of chilli sauce
  • 2 eggs
  • fresh coriander
  • 1tbsp chopped peanuts
  • 2 x 125g pot Activia Fat Free Cherry Yogurt for each person

Cook 2 layers of flat noodles according to the instructions on the packet, drain and set aside. Meanwhile, heat 1 tbsp of sunflower oil in a non-stick frying pan. Crush 1 garlic clove, finely dice 1 red chilli and slice 4 spring onions, then drop them in the pan and cook for 1-2 minutes. Then add the noodles, the juice of 1 lime and a dash of chilli sauce. Push the noodles to one side and add 2 beaten eggs to the pan, stirring them so they form a broken up omelette. Mix with the veg and divide between 2 plates. Top each plate with fresh coriander and 1 tbsp of chopped peanuts. Finish with a 125g pot of Activia Fat Free Cherry Yogurt each.
